Mid-Week Munchies


As I sit tapping my pen anxiously against my book, staring at the blank page in front of me, I think to myself, Isn't study fabulous? Draining all enthusiasm I had reserved for the day ahead and leaving me questioning the depths of my attention span, I am merely left distracted and, most of all, hungry. A quick fix of chocolate or a raid of the pantry would be a perfectly reasonable solution for these mundane midweek study sessions. Instead, I have come up with five easy and rewarding meals that are easily prepared for those fleeting breaks in between the note taking and flow-chart creating. Snack on a simple chicken salad for a healthy alternative, use up leftovers with a supreme pizza or pull together  satay vegetables for a noodle concoction . This recipe is a simple take on corn fritters for a kick sure to stun and it
only takes minutes to serve! In a spare moment, take the time to whip up a batch of healthy snacks including chewy raspberry and almond bars, for an easy to reach treat to keep you charged and energized throughout the day.
